Cast Iron Za'atar Manoushe
Here’s a fun way to flex your new kneading skills with the most iconic food of the middle east. Cooking on the cast iron skillet gives your manoushe that extra nice crispy crunch that makes the za’atar taste even better. Dough Recipe
Ingredients: 2 cups all purpose flour, 2 cups whole wheat flour, 1 ⅓ cups warm water, 1 tbsp sugar, 1 ½ tsp yeast, 1 tsp salt, 2 tbsp extra virgin olive oil
Recipe:
Whisk yeast, sugar & warm water in a bowl. Let sit for 10 minutes.
Mix flour and salt. Form a well and pour in yeast mixture and olive oil.
Mix or knead until the dough has formed into a smooth uniform dough ball.
Place in a well oiled boil. Cover and let rise in a warm area until doubled in size.
Cut and shape into 6-8 dough balls. Cover and rest for 2 hours.
Flatten dough balls and heat cast iron skillet on medium high.
Place bread on a cast iron skillet pressing down to form a crust. Let cook on one side for 1 minute and flip. Cook the other side for 2-3 minutes and flip again. Drizzle with olive oil and lots of za’atar. Cook another 2-3 minutes until the bottom is crispy and the za’atar and oil is bubbling.
Slice and serve with your favorite vegetables.
